Sophie's Kitchen Vegan Seafood is @Safeway!

Bellingham's vegan-friendly Safeway: 1275 E. Sunset If you have been reading this blog for awhile, you may already be aware of how much I love Sophie's Kitchen vegan seafood , particularly  the shrimp and the crab cakes. I was really bummed when The Market on Lakeway closed for a number of reasons, but one of the main reasons was because The Market was the only place in town where you could find Sophie's products. I have made requests for other stores in town (including the Co op , Terra at the Public Market , and Fred Meyer) to start carrying Sophie's, but with no luck. And then suddenly it came to my attention (thanks Kymi!) that Safeway now has Sophie's!!! Which of course meant I had to stop by there soon after I heard this to stock up on my favorite Sophie's products. One of the questions most frequently asked of me is what made me decide to start this blog? I usually explain that when I began writing, I hoped to create the kind of resource that I was always looking for myself—something that could serve as a guide to help people discover vegan-friendly restaurants and businesses in Bellingham.
