Oven-Roasted Chickpeas: A Healthy Crunchy Tasty Snack

Now that I can't eat corn anymore, I find myself missing one of my favorite snack foods of all time: popcorn! But luckily for me, I have discovered a new snack that is easy to make, very tasty, and works like popcorn when I want something salty to crunch on while watching a movie.

Chili and Lime Oven Roasted Chickpeas:

Preheat oven to 350. Mix together the following ingredients:

2 cans chickpeas, drained and rinsed (Trader Joes has organic chickpeas in non-BPA lined cans)
1/2 to 1 tablespoon chili powder (depending on taste)
the zest and juice of one small lime
1 teaspoon salt
1 tablespoon olive oil

Spread the chickpeas out on a flat baking sheet and cook for 70-80 minutes until crunchy.


That's pretty much it! You can experiment with a variety of seasonings and flavors, but I am partial to the lime and chili combination, so it's what I tend to make. I have heard these can be stored in a jar or air-tight bag, and that they keep well for several days up to a week, but to tell you the truth, I haven't tested that out because these things don't last that long in my house!
