Trish over at Binary Vegan posted a fabulous recipe for mac 'n "cheese" awhile back, and I finally had a chance to try it last weekend. I agree with her that it turns out delicious and is definitely a recipe worth keeping! It also got me thinking about all of the other veggie combos I could try out with this recipe some time. If you want to give it a shot yourself, she posted the recipe here. (I followed it pretty closely, although I think I used a bit more tofu and only 1/4 cup olive oil).

I'm glad you liked it! I know that nooch is a love-it-or-hate-it kind of thing, so you never know with mac and cheese recipes. This one is definitely my favorite, so far!

I have to say, yours looks better than hers. Did you use silken tofu instead of firm? I would probably do blended cashews instead of tofu, but that's just my preference. Keep posting yummy photos!
Thanks again Trish! I have always been a fan of nutritional yeast. There are a number of tasty things to be done with it, and this is definitely one of them. :)

I don't think mine looks better than Trish's at all, so that's quite the compliment! Her picture definitely made me hungry! I did use firm organic tofu. Blended cashews or cashew cream might be really good. Let me know if you try it how it works out. I am always up for mac and cheese variations!
